As the season changes, so do the flavors at COURSE and Morning Would, two culinary concepts, one singular Scottsdale restaurant! We are excited to announce the launch of Chef/Partner Cory Oppold’s spring menus alongside a special menu for an unforgettable Easter Sunday celebration.
COURSE
Starting March 28, savor the new five- or 10-course seasonal tasting menus starting with a silky UNI custard enriched with the luxurious touch of Kaluga caviar and the earthy notes of shiitake mushrooms followed by the bison tartar with potato pave, smoked egg yolk, and shallot rings. The scallop dish brings a touch of the sea, paired with Peruvian potato, the warmth of aji Amarillo, carrot, and the deep purple of maíz morado. For something unexpected, enjoy the fried duck bologna nestled with little gem lettuce tempura and a dab of hot mustard offering a play on textures and flavors. Dessert options such as medovik with honey cream and coco puff with raspberry mousse will round off your dining experience, along with an éclair with lemon balm to finish. Morning Would
Make your Sundays sing with a brunch unlike any other! Starting March 10 and served through September 8, indulge in Sunday brunch at Morning Would. Enjoy a Prix Fixe Brunch Menu ($75) featuring a curated selection of dishes such as the potato Latke topped with cured salmon and a dollop of chive sour cream. Fancy it up with a caviar supplement if you’re feeling indulgent. The Monte Cristo turns toasted Noble Bread into something extraordinary with ham and sauce mornay. Easter
Join COURSE for a special Easter brunch from 10:30 a.m. to 3:30 p.m. on Sunday, March 31. The seven-course Prix Fixe Menu ($125) boasts spring’s freshest flavors. Highlights include the Painted Egg featuring Kaluga caviar and asparagus custard, a vibrant Orzo Pasta adorned with English peas and Parmesan creme, and the exquisite Lamb Sirloin paired with braised fennel and red bell pepper relish.
