Restaurant Continues to Adapt and Pivot to Meet Consumer Needs in Wake of the Pandemic

Grimaldi’s Pizzeria unveils its first satellite kitchen, Grimaldi’s Pizzeria To-Go, in Scottsdale, which is now open. The new concept offers delivery and carryout only, which allows Grimaldi’s to provide its customers with an alternative and convenient option as the demand for takeout continues to increase. This is the first location to open as part of a company strategy to expand its brand portfolio beyond traditional brick and mortar stores. A second satellite kitchen is currently under construction in Austin, TX.

“In the wake of the pandemic and the growing trend of convenience-driven options, we felt the time was right to   launch a takeout and delivery only satellite kitchen,” says Joseph Ciolli, CEO of Grimaldi’s Pizzeria. “With the growth we’ve seen in our to-go and delivery business, as well as the added convenience of these to-go only locations, this alternative model allows us to grow our brand in existing and new markets.”

Grimaldi’s Pizzeria To-Go is located on the southwest corner of Scottsdale Road and Shea Boulevard inside Kitchen United MIX. It offers the same pizza, calzone, salads and desserts as its dine-in restaurants, and features the same seasonal dishes. Guests will have a full contactless experience at Kitchen United MIX. They can order online for delivery or carryout or can walk in and place an order at the kiosks.

Kitchen United MIX, which opened in December 2019, is a facility that houses 14 restaurant brands and provides individual commercial kitchen equipment and spaces. The concept allows restaurant operators to focus solely on the food, while Kitchen United takes care of the rest, including marketing, technology and more.

Grimaldi’s full-service Arizona location dining rooms and outdoor patios have reopened following federal, state and local health department recommendations in order to help ensure they maintain a healthy and safe environment for everyone who enters.
