Valley favorite Clever Koi is unveiling four new ramen dishes at their Phoenix and Gilbert locations. This version 2.0 of their high-demand bowls includes two refreshed options – new takes on the Pork Ramen and Lemon Chicken Ramen – plus two brand new ramen bowls – the Spicy Kimchi Ramen and the Vegan Shoyu Ramen. The driving force behind these awesome new ramen bowls was Chef Jameson Araujo. Chef Jameson was brought in specifically for his expertise in Chinese food, formerly at restaurants such as Hop Alley, Uncle Ramen and Mr. Tuna in Denver. The four new bowls will be available for dine-in or take-out starting today, February 18th.
“Ramen has always been a best seller for us, so we wanted to really up the stakes for 2021,” says Chef Jameson Araujo. “These new bowls bring new flavor profiles to the table, while also offering tweaks on some of our favorites.”
The early standout is sure to be the Spicy Kimchi Ramen, with a traditional, spicy kimchi spiced up and cooked in rice water, and fatty chicken thighs finished with a house made chili oil. For those looking for something vegan, or perhaps just looking to cut back on traditional protein, this meaty tofu-based ramen is packed with shiitake mushrooms, garlic, soy and brown sugar, marinated and flash cooked in the oven for a satisfyingly crispy texture. The Pork Ramen brings a new level of acidity and funk to the table with a traditional tonkatsu broth, while the Lemon Chicken Ramen uses a house made lemon tare marinade made from the cocktail bar’s citrus rinds.
