New Rooftop Restaurant to Bring Northwest Mexico Flavors to Old Town

In partnership with The Wayfaring Group, PEG Companies announced its latest concept: Cielito, a vibrant rooftop bar and restaurant celebrating the flavors and spirit of Northwest Mexico. Opening in February 2026 atop the new AC Hotel Scottsdale Old Town, Cielito introduces a fresh, thoughtfully crafted rooftop dining experience to the heart of Old Town.

TWG – an ethnic research and design consultancy – developed Cielito from the ground up. Led by anthropologist and Concept Strategist, Alex Webb, and award-winning chef and Creative Director, Shon Foster, TWG created a concept rooted in how people will eat, drink, and spend their night out. By blending cultural research with culinary direction, every element of Cielito, including menu and mood, emerges from an authentic understanding of the region.

Envisioned as a day-to-night gathering place for hotel guests and locals alike, Cielito pairs elevated yet approachable cuisine with a thoughtful cocktail program and sweeping views of Camelback Mountain and the Scottsdale skyline. Designed to feel both transportive and rooted in its surroundings, the rooftop setting will offer an effortless indoor-outdoor flow with sunset-forward seating and a lively pool-deck energy.

Chef Shon developed Cielito’s menu around the clean coastal and highland flavors of Northwest Mexico. Guests can expect shareable plates, bright ingredients, warm textures, and bold contrasts executed through simplicity, quality, and ease. His decisions in ingredients, preparation, and design aesthetics shape how guests will experience the restaurant from the moment they arrive. Chef Shon previously served as Food and Beverage Director and Executive Chef at Amangiri, one of the world’s most respected boutique resorts.

Webb developed Cielito’s cocktail program, designing drinks that reflect Cielito’s bright, expressive, and easy-to-enjoy style. Designed to complement the menu and the rooftop setting, the beverage program highlights agave spirits, citrus, and seasonal ingredients, offering signature cocktails and sessionable pours that invite guests to linger.

“Cielito is meant to feel like a little escape above the city, sun-washed, coastal, and effortlessly social,” said Webb. “We wanted guests to step off the elevator and instantly feel the warmth of Northwest Mexico, with a rooftop energy that moves naturally from laid-back afternoons to electric nights.”

Cielito will span 3,100 square feet, offering an intimate rooftop setting designed for a “romance chill” day-to-night rhythm rather than a high-octane party scene. With approximately 70 seats total, including a 14-seat bar and seating that extends onto the pool deck, the space creates a semi-private, destination feel the moment guests step off the elevator. The indoor-outdoor space, designed by Jules Sinson from EDGIED, features airy, matte natural textures and warm neutral tones, punctuated by vibrant color and expressive artwork inspired by desert skylines and contemporary Mexican folk art.

Cielito will be located on the rooftop of the AC Hotel Scottsdale Old Town, at 7117 E. 3rd Ave. in Old Town Scottsdale.
