Sophisticated Steakhouse and Bar Opens Another Location, This Time in the West Valley

Bourbon & Bones Chophouse|Bar, a rare chef-driven, sophisticated steakhouse and bar, opens at its highly anticipated third location at 83 Marketplace on the southeast corner of 83rd Avenue and Happy Valley Road. The stunning location is adjacent to Peoria’s Sunrise Mountain Preserve and opens almost seven years after the flagship Bourbon & Bones debuted in Old Town Scottsdale, September 2016.

“The outdoor surroundings add to the excitement of this newest Bourbon & Bones.  The area is breathtaking, and we took full advantage of this,” said S. Barrett Rinzler, Founder & CEO, Square One Concepts, which owns Bourbon & Bones and Cold Beers & Cheeseburgers among other concepts.

“We couldn’t be more pleased to welcome Peoria and the greater Northwest neighborhoods to this newest Bourbon & Bones location.  We know residents have looked forward to this one for a long time.  It’s taken a while and we believe it’s been worth the wait.”

The establishment comprises nearly 7,000 square feet with a dining room that boasts startling views of the Sunrise Mountain Preserve with windows opening when weather permits.  The location also features an additional 1,000 square feet of patio space, some of which is adjacent to the dining room, the other ideal for cocktails and dining al fresco.

The beautiful Northwest Peoria spot has clean, contemporary interior lines warmed by chic midnight blue and touches of gold throughout.  A dramatic entry with a wall of backlit steer skulls softly illuminates and reminds guests of the establishment’s specialties.  A long and luxurious granite bar features ample high-top tables that serve as prime dining perches as well.  Altogether the bar is haloed by industrial chic overhead pendant-style lights, creating that elegant-yet-lively vibe for which Bourbon & Bones is known.

“In Peoria, we’ve also added what I’d call a discreet private dining room that you’d never know is there, to accommodate meetings and special occasions,” Rinzler said. “We also have the ability to separate a large part of the main dining room to host Casks & Cuts, our popular paired dining series, and other special events.”

The stylish interiors are icing on this cake because the stars of the show are the extensive list of handcrafted cocktails, wines and bourbons curated by legendary beverage manager and sommelier, Christopher Marshburn, and the exquisite prime beef and fresh seafood menu designed by Executive Chef Mutaz “Taz” Fakhouri.  Bourbon & Bones serves only hand-selected Prime Elite beef from the top one percent of all U.S. prime beef.  These superior cuts have greater tenderness, juiciness and flavor.

A robust Coravin program offers a list of exclusive, rare wines by the glass, pleasing to any oenophile, curated by Marshburn.  And, of course, the selection of bourbons, whiskeys and scotches – more than 700 varieties – is the largest in the region, including some of the rarest options available to the public.

Bourbon & Bones began in Old Town Scottsdale, opened in September 2016, in a converted mid-century modern building.  The flagship location appealed to discerning diners almost immediately, delivering an elegant-yet-easy style, perhaps a complement to Arizona’s leisurely lifestyle. A Gilbert location opened in February 2021, at SanTan Village on Williams Field Road in the East Valley.
